This one is special! Burgers are my all time favourite food. Oyster mushrooms are the best meat alternative for me. So put them together and you have the tastiest plant-based burger of all times. It will convince every meat-lover or anyone who is sceptical about vegan food. I have served this one to many of my friends and they were all extremely impressed and love every bite of it. One of my friends actually thought that was meat.

This is surely the easiest way if you want to transition to being vegan or simply enjoying more plant-based meals throughout the week. You will not be missing anything. It can actually be much juicier that pulled pork itself so just go for it and give it a try.   

Ingredients

  • 1 tsp white miso paste
  • 1 tbsp tomato paste
  • 2 tbsp soy sauce
  • 3 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 3 tbsp red/white wine 
  • 200 g oyster mushrooms
  • 4 small red onions

Toppings

  • 2 burger buns
  • cole slaw
  • chilli jam (Chilli Hills)
  • 1 avocado
  • fried onions

Method

  1. Preheat the oven to 220°C. 
  2. Clean the mushrooms with a wet towel and tear them apart lenghtwise to thin strips. Quarter the onions lenghtwise. Place the mushrooms and the onions on a baking tray covered with parchment paper.
  3. Combine the rest of the ingredients in a bowl and mix well. Pour over the mushrooms and massage well to cover everything evenly.
  4. Bake in the oven fo 15-20 minutes or until most of the liquid from the mushrooms has evaporated. 
  5.  Toast the burger buns. Spread a thin layer of the chilli jam, then add the avocado, cole slaw, crispy onions and the pulled mushrooms on top. Serve with some french fries and enjoy.
