Asian rice bowl

This recipe is always there to save you when you have had a long day and don´t feel like cooking. It is super quick and easy and in the same time nourishing and comforting.
You only need four very basic components to prepare the dish – protein and carb sources, vegetables, sauce. I have made this one Asia-inspired but just by swapping the type of sauce and vegetables, you could go for Mexican, Greek, Italian or any other cuisine you like.
Instead of rice you could use rice or soba noodles, quinoa, couscous, bulgur or any other carb source you love.
I know you might not like tofu, but the only reason for that is that you have either not seasoned it properly or didn´t combine it with a flavorful enough sauce. Give this one a try and you will be surprised how good it could taste.
Ingredients
- 125 g rice
- 350 g tofu
- 2 big carrots
- 1/4 purple cabbage
- 1 chilli
- 1 spring onion
- 10 g cilantro
- a sprinkle of sesame seeds
For the sauce
- 100 g peanut butter (please only ever use the 100% peanuts one)
- 20 ml soy sauce
- 1/2 lemon
- 20 g fresh ginger
- 1/2 chilli or hot sauce
- 1 garlic clove (optional)
- water
Method
- Start by cooking the rice as per packaging instructions.
- Meanwhile peel the ginger, chop into small chunks and use the garlic press to mince it finely or use the finest side of a food grater. Finely chop the chilli and combine them with the ginger in a mixing bowl. Add the rest of the ingredients and mix well. Add a splash of water until you reach the desired consistency. In the beginning it will look like something is wrong, but just keep mixing and adding water if too thick.
- Slice the tofu into 1 cm cubes. Heat 1 tbsp of oil in a pan at a medium-high heat and fry the tofu until golden on a few sides – around 10 minutes.
- Meanwhile cut the carrots and the cabbage into thin long strips. (If you use a mandoline slicer just be careful with your fingers)
- Serve the tofu and the vegetables on top of the rice.
- Chop some chilli, green onions and cilantro and sprinkle them together with some sesame seeds over the assembled bowl.
